Do I need to test the water PH levels?

As a new and emerging industry of alternative wellness, there are currently no specific regulations governing pH levels in commercial cold plunges. 

United Kingdom:

There are currently no regulations specifically targeting cold plunge baths. 

The Health and Safety Executive (HSE) emphasises the importance of managing water systems to prevent health risks, such as Legionella. The HSE recommends maintaining water temperatures below 20°C for cold water systems to inhibit bacterial growth (which your Monk does by default, operating at up to 16°C).
